colcannon of sorts

I started with:

1.5 pounds red potatoes, scrubbed and quartered
1/2 large yellow onion, diced
1 pound of Brussels sprouts, scrubbed, with the yucky ends cut off
6 ounces of cheap beer
1.5 tsp dry mustard
salt and pepper

pile into a casserole with a lid, and bake in a preheated 350 oven for about 25 minutes.

add 2 tsp vegetable oil, stir, and bake for another 20 minutes

uncover and add 2 oz of grated Jarlsberg

bake for 20 more minutes until the potatoes are done.

  1. What do you suggest substituting for Brussels sprouts, if - like myself - you abhor Brussels sprouts?
    (Although they do look really cute in the garden.)

  2. well, maybe kale or cabbage or collard greens, or maybe even broccoli or asparagus?
